Romano beans, if you don't already know them, are meatier than green beans, and a favorite among Italian cooks. As such, they're also known as Italian green beans, Italian string beans, Italian flat beans, and pole beans. They're flat and broad (about 1 inch wide), tender, and sweet. They're available through the end of September. To prepare the beans, trim them and cut them on a diagonal into bite-size pieces, then simmer them in boiling water to serve as a side dish. You can also leave them whole and roast them, which intensifies their flavor and produces slightly charred beans that are addictive.

1 pound Romano beans, stem ends trimmed

1/4 cup olive oil

3 cloves garlic, smashed

3 sprigs of fresh thyme, broken in half

Salt and pepper, to taste

1. Set oven at 450 degrees.

2. On a large rimmed baking sheet, toss the whole beans with the oil, garlic, thyme, salt, and pepper. Spread the beans into a single layer.

3. Roast for 15 to 20 minutes, turning once, or until the beans are tender and browned. Serve warm or at room temperature.

The Abate Fetel pear is named after the French monk of the same name who first cultivated them. They are the most unique shaped of the many varieties, appearing oblong or banana shaped with a yellow background, red blush, and some speckling. Like some other pear varieties, the Abate Fetel changes only slightly in color when ripe but will quickly turn brown inside when over ripe. When choosing an Abate Fetel check for a slight give with your finger near the stem. Once fully ripe, they should be eaten quickly.

Pico de Gallo is the queen of fresh salsa, but this easy recipe runs a close second. Some cooks will tell you that the lime juice is optional, but I think it works perfectly with the cilantro to create a unique flavor combo

Cilantro Salsa Recipe:

5 Roma (plum) tomatoes, peeled and seeded

3 Tbsp. Cilantro

4 Tbsp. Scallions

2 Garlic cloves

2 Jalapeno peppers, chopped

½ Tbsp. Lemon juice

1 Tbsp. Lime juice

½ tsp. Cumin

¼ tsp. Salt

¼ tsp. Black pepper

Directions: Mince garlic and peppers; chop onions, tomato, and cilantro. Combine. Add spices and liquid ingredients.

Refrigerate for up to 4 hours.

Serves four.

Baby Bok Choy

Bok Choy Stir Fry Recipe
1 1/2 pounds bok choy or baby bok choy

1 1/2 tablespoons canola, vegetable or peanut oil

1-2 cloves garlic, finely minced

1 teaspoon grated fresh ginger

3 tablespoons broth or water (or 2 tablespoons broth/water + 1 tablespoon wine)salt to taste

1/2 teaspoon sesame oil

1. Start by trimming the stem off – don’t trim too much – just the end. Cutting the thick stem off will ensure that the bok choy cooks evenly. Separate out the leaves, keep the tender center intact and clean under running water. Drain.
2. Finely mince garlic and grate fresh ginger with a microplane grater. Grating the ginger helps break up the tough fibers! (and yeah, sometimes when the ginger is nice and fresh, I don’t even bother peeling off the paper-thin skin)
3. Place wok or frying pan on your stove and pour in the cooking oil. Add the garlic and ginger. Turn the heat to medium-high. Let the ginger and garlic gently sizzle in the oil. When the aromatics become fragrant and light golden brown, add the bok choy leaves. Toss very well to coat each leaf with the garlicky, gingery oil for 15 seconds. Pour in broth, water or wine. Immediately cover and let cook for 1 minute. Season with salt and drizzle a bit of sesame oil on top.

Tomatillo's

Tomatillo Salsa Verde Recipe
To cook the tomatillos, you can either roast them in the oven, or boil them. Roasting will deliver more flavor; boiling may be faster and use less energy. Either way works, though boiling is a more common way to cook the tomatillos.
Ingredients:

1 1/2 lb tomatillos
1/2 cup chopped white onion
1/2 cup cilantro leaves
1 Tbsp fresh lime juice
1/4 teaspoon sugar
2 Jalapeño peppers OR 2 serrano peppers, stemmed, seeded and chopped
Salt to taste
Method:
1 Remove papery husks from tomatillos and rinse well.
2a Roasting method Cut in half and place cut side down on a foil-lined baking sheet. Place under a broiler for about 5-7 minutes to lightly blacken the skin.
2b Boiling method Place tomatillos in a saucepan, cover with water. Bring to a boil and simmer for 5 minutes. Remove tomatillos with a slotted spoon.
2 Place tomatillos, lime juice, onions, cilantro, chili peppers, sugar in a food processor (or blender) and pulse until all ingredients are finely chopped and mixed. Season to taste with salt. Cool in refrigerator.
Serve with chips or as a salsa accompaniment to Mexican dishes.
Makes 3 cups.

When the longans are fresh, they have a leathery light brown skin, which changes its color to dark brown due to age or changes in the environment. This fruit is very popular in China and is known by its local name pinyin, which means 'dragon eye' because the place where the pit or seed is located resembles an eye. The longan fruit season is between mid and late summer and is harvested immediately after the lychee fruit. The longan tree yields fruits in clusters, twice a year, once in the end of the dry season and once during late summer. Product of Florida.

This tropical fruit is available June through September.Monstera deliciosa has the flavor of banana, mango and pineapple. A rare treat indeed. This extremely unusual fruit is up to a foot long, green and sort of cucumber-shaped covered with a mosaic of hexagonal 'tiles'. It is eaten as it ripens or used in sweet blender drinks. The plant of the monstera may be familiar to you. It is the common split-leaf philodendron.

STORAGE: Ripen at room temperature until the 'tiles' come loose with a fork. Underneath is the delicious fruit. It will ripen rapidly but unevenly.

DISPLAY: Display with other sub-tropical or specialty fruits.

NUTRITION: Low in calories, high in potassium and Vitamin C.

The small, white navy bean, also called pea bean or haricot, is particularly popular in Britain and the U.S. featured in such dishes as baked beans, soups, and even pies.

Homemade Baked Beans from Scratch
Ingredients:
Water - 4 cups
Ketchup - ¼ cup
Brown sugar - 2 tablespoons
Maple syrup - ¼ cup
Molasses - 2 tablespoons
Worcestershire sauce - 1 teaspoon
Dried navy beans - 1 cup
Salt - ½ teaspoon
Chili powder - 1 pinch
Small onion (chopped) - 1
Ground black pepper - 1 pinch
Procedure: Take a large vessel and put the navy beans into it. Pour cool water in the vessel to cover the navy beans 4 inches above. Let the beans soak for at least 8 hours or overnight. Then, drain and rinse the beans and preheat the oven to 375 degrees Fahrenheit. Take a large saucepan and place the soaked beans in it. Pour 4 cups of water to it and bring the mixture to boil over high heat. After that, reduce the heat to medium-low and cover the saucepan. Let the mixture simmer for at least an hour. Take a small bowl and combine maple syrup, ketchup, brown sugar, Worcestershire sauce, salt, pepper, molasses and chili powder in it.Stir the mixture properly and keep it aside. After simmering the beans for one hour, drain the beans and collect the liquid in a small bowl. Place the beans in a casserole dish and add chopped onion and molasses sauce to it. Then pour the reserved liquid over the beans to cover the beans by ¼ inch. Cover the casserole dish and bake the mixture in the preheated oven for 10 minutes. After 10 minutes reduce the temperature of the oven to 200 degrees Fahrenheit. Bake the beans for 6 more hours, stir the mixture in between, after 3 hours. Once the beans are cooked, let the mixture cool down for 15 minutes and then serve.

Nutritional Value:A good source of vitamin C and potassium, kohlrabi is an excellent source of dietary fiber. Low in calories, one cup of raw kohlrabi contains about 40 calories. Eating five daily servings of vegetables and fruits lowers the chances of cancer. A recent study found that eating nine or ten daily servings of vegetables and fruits, combined with three servings of low-fat dairy products, were effective in lowering blood pressure.
Applications:Peel, slice, dice or julienne for mixed green or vegetable salads. Shredded or grated, add extra flavor to slaws and sauces. Steam, boil, braise, sauté or stir-fry. Parboil; add taste and texture to a variety of salads. Simply served, this vegetable offers a delicate flavor topped with butter or a favorite flavored light sauce. Serve as an accompaniment for meat and poultry dishes. This tiny vegetable is excellent blanched, refreshed and chilled. Baby kohlrabi loves to be smothered in warm or cold dressings. Enhance with nutmeg, chives, marjoram, shallot, ginger or fresh sweet basil. Cook bulbs and leaves in favorite soups. Whole peeled kohlrabi is excellent in stews and braised dishes. Halfway into the cooking process, toss in trimmed leaves. To cook trimmed leaves, boil just until tender about two or three minutes. Drain leaves; slice or chop; sauté in butter or oil. Cooked baby kohlrabi makes an attractive edible garnish. To store, wrap stems and leaves separately in plastic; refrigerate in crisper drawer. For optimum flavor and texture, use within one week. Baby purple kohlrabi turns khaki-colored when cooked, losing its stunning lavender to violet color. It also loses its skin-deep hue when peeled.

BLACK ARKANSAS APPLES

The Arkansas Black apple is one of the crispiest and most dense apples around. It is a late maturing apple that is generally considered best for cooking & desserts rather than eating out of hand.

Selection Information:

Arkansas Black apples are excellent eaten out of hand as well as in baking. They will hold their shape well for pies, and will give a slightly tart flavor for apple sauce.

Good-quality Arkansas Black apples will be firm with smooth, clean skin and have good color for the variety - which is a dark red to almost black. Test the firmness of the apple by holding it in the palm of your hand. (Do not push with your thumb). It should feel solid and heavy, not soft and light. To store, keep apples as cold as possible in the refrigerator. Apples do not freeze until the temperature drops to 28.5 degrees F. Avoid: Avoid product with soft or dark spots. Also if the apple skin wrinkles when you rub your thumb across it, the apple has probably been in cold storage too long or has not been kept cool.

The Arkansas Black apple is a late maturing variety - which means mid-October in the Northern hemisphere.

These things are great, their chock full of Vitamin A, Vitamin C and potassium. The leaves, flowers and the fruits of the Passionflower have been shown to have a mild sedative effect. The pulpy seed inside is what you eat. Do not eat the peel, yuck! The skin will become dimpled with time, this does not mean they have "gone bad". Actually they are developing a sweeter taste. The Lychee contains on average a total 72mg of Vitamin C per 200 grams of flesh. This makes lychees a very good source of Vitamin C. On average as little as three lychee fruits would meet a third of an adult’s daily recommend Vitamin C requirement.Lychess are also high in Copper, Phosphorous, Potassium and the B vitamin, Thiamine.Lychess are low in Saturated Fat, Cholesterol and Sodium.Most of the energy in a lychee is in the form of carbohydrate.
